Katy is feeling a bit better today, and looks significantly happier overall. Her throat hurts less, but her neck hurts where the biopsies where taken. It looks a bit like someone strangled her, all black and blue. Etta was chilling in her carrier this morning, ready for her usual Boulder adventure, and is now hanging out at Katy's feet while she does the crossword. Most importantly, Katy can shower again today! Hooray!
The winds have died down and we had some rain yesterday afternoon, but the fire has already destroyed at least 139 homes, including several that belonged to friends. The forest service is estimating it will take at least ten days to get the fire out, and as of this morning it was still only 30% contained. Some people are being allowed back into their homes, but are being told to stay alert in case they need to re-evacuate.

Amy you didn't respond so I am assuming you are enthusistically awaiting my Chocholate Zucchini Cake recipe to prepare for your family who is anxiously awaiting your preparation for them!
ReplyDelete2 medium zucchini, trimmed and grated on large holes of a box grater
9 t butter at room temp
2 3/4 cups of flour
1/4 cup unsweetened cocoa
1 1/4 t baking soda
1 1/2 cups sugar
1/2 cup corn oil
2 eggs
1 t vanilla
1/2 buttermilk
1/4 cup confectioners sugar
1.Working in batches, pput a mall mound of succhini in center of large square of double-layer cheesecloth. Gather corners together and squeeze out as much water as possible. Transfer zucchini to a bowl and set aside.
2. Preheat oven to 325. Butter a deep 9"cake pan with 1 t of the butter. Sift flour, cocoa, baking soda, and salt toethr into a mixing bowl and set aside.
3. Beat together remaining 8 t butter and sugar in a large bowl with an electri mixer on medium speed until fluffy, 3-4 min. Add oil, beating well. Beat in 1 egg at a time, add vanilla, reduce speed to low and beat in flour mixture and buttermilk in 3 alternate batches, Stir in reserved zucchini.
4. Pour batter into prepared pan and bake until toothpick inserted in center comes out clean, about 1 hour and 20 min. Remove from oven and set aside to let cool. Invert onto a plate and dust with sugar...
